Description

Delicious stuffed potatoes filled with buffalo chicken and topped with cheese.


Ingredients

  • 4 large russet potatoes
  • 2 cups shredded cooked chicken (rotisserie optional)
  • 1/2 cup buffalo sauce
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup ranch dressing or sour cream

Instructions

  1. Preheat your oven to 400°F (200°C) and scrub the russet potatoes clean.
  2. Place potatoes directly on the oven rack and bake for 45-60 minutes until tender.
  3. While baking, mix shredded chicken with buffalo sauce in a bowl.
  4. Once potatoes are cool enough to handle, slice them in half lengthwise and scoop out some flesh.
  5. Fill each potato skin with the buffalo chicken mixture and top with cheddar cheese.
  6. Bake again for 10-15 minutes until cheese is bubbly and golden.

Notes

  • For extra flavor, you can add blue cheese crumbles on top before serving.
