Delicious stuffed potatoes filled with buffalo chicken and topped with cheese.

- 4 large russet potatoes
- 2 cups shredded cooked chicken (rotisserie optional)
- 1/2 cup buffalo sauce
- 1 cup shredded sharp cheddar cheese
- 1/2 cup ranch dressing or sour cream
Instructions
- Preheat your oven to 400°F (200°C) and scrub the russet potatoes clean.
- Place potatoes directly on the oven rack and bake for 45-60 minutes until tender.
- While baking, mix shredded chicken with buffalo sauce in a bowl.
- Once potatoes are cool enough to handle, slice them in half lengthwise and scoop out some flesh.
- Fill each potato skin with the buffalo chicken mixture and top with cheddar cheese.
- Bake again for 10-15 minutes until cheese is bubbly and golden.
Notes
- For extra flavor, you can add blue cheese crumbles on top before serving.
