Description

Delicious and chewy cherry oatmeal cookies that are easy to make and perfect for any occasion.


Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup dried cherries
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together oats, flour, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
  5. Fold in the dried cherries.
  6. Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about two inches apart.
  7. Bake for 10-12 minutes or until edges are golden brown but centers remain soft.
  8. Allow cookies to cool on the baking sheet for five minutes before transferring to wire racks.

Notes

  • For a chewier texture, let the dough rest in the refrigerator for 30 minutes before baking.
  • You can substitute dried cherries with raisins if preferred.
