- 1 cup old-fashioned rolled oats
- 1 cup all-purpose flour
- 1/2 cup dried cherries
- 1/2 cup brown sugar, packed
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together oats, flour, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
- Fold in the dried cherries.
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about two inches apart.
- Bake for 10-12 minutes or until edges are golden brown but centers remain soft.
- Allow cookies to cool on the baking sheet for five minutes before transferring to wire racks.
Notes
- For a chewier texture, let the dough rest in the refrigerator for 30 minutes before baking.
- You can substitute dried cherries with raisins if preferred.
