Description

This delicious pasta salad features rotini or bowtie pasta, dill pickles, and a creamy dressing, perfect for summer gatherings.


Ingredients

  • 12 oz pasta (rotini or bowtie)
  • 1 cup dill pickles, diced
  • ½ cup pickle juice
  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • 1 tsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ cup cheddar cheese, cubed
  • ¼ cup fresh dill, chopped
  • Salt and black pepper, to taste

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, whisk together mayonnaise, sour cream, pickle juice, Dijon mustard, garlic powder, and onion powder.
  3. Add cooled pasta, diced pickles, cheddar cheese, and fresh dill.
  4. Toss until evenly coated.
  5. Season with salt and black pepper to taste.
  6. Chill for at least 30 minutes before serving for best flavor.

Notes

  • For added crunch, you can include diced red onion or bell pepper.
