Description

This oven-baked tilapia recipe features a blend of fresh herbs and lemon, creating a light and flavorful dish that’s perfect for a weeknight dinner.


Ingredients

  • 4 tilapia fillets
  • 1 fresh lemon
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon fresh oregano
  • 1 tablespoon fresh thyme
  • 1 tablespoon flat-leaf parsley
  • 1 teaspoon fresh dill (optional)
  • 2 garlic cloves, minced
  • Salt to taste
  • Freshly ground black pepper to taste
  • Cherry tomatoes (optional)
  • Kalamata olives (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Take your tilapia fillets out of their packaging and gently pat them dry with paper towels. Season both sides lightly with salt and freshly ground black pepper.
  3. In a small bowl, combine minced garlic, lemon zest, chopped fresh herbs, olive oil, and the juice from half of the lemon. Stir until it forms a fragrant paste.
  4. Lay the seasoned tilapia fillets on the prepared baking sheet and spread the herb mixture evenly over the top of each fillet.
  5. Thinly slice the remaining half of the lemon and arrange 2-3 lemon slices on top of each herb-crusted tilapia fillet.
  6. Transfer the baking sheet to the preheated oven and bake for 12-15 minutes, checking for doneness around the 12-minute mark.
  7. Once baked, remove the tilapia from the oven, garnish with fresh parsley or dill, and serve with extra lemon wedges.
