- 4 tilapia fillets
- 1 fresh lemon
- 2–3 tablespoons extra virgin olive oil
- 1 tablespoon fresh oregano
- 1 tablespoon fresh thyme
- 1 tablespoon flat-leaf parsley
- 1 teaspoon fresh dill (optional)
- 2 garlic cloves, minced
- Salt to taste
- Freshly ground black pepper to taste
- Cherry tomatoes (optional)
- Kalamata olives (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Take your tilapia fillets out of their packaging and gently pat them dry with paper towels. Season both sides lightly with salt and freshly ground black pepper.
- In a small bowl, combine minced garlic, lemon zest, chopped fresh herbs, olive oil, and the juice from half of the lemon. Stir until it forms a fragrant paste.
- Lay the seasoned tilapia fillets on the prepared baking sheet and spread the herb mixture evenly over the top of each fillet.
- Thinly slice the remaining half of the lemon and arrange 2-3 lemon slices on top of each herb-crusted tilapia fillet.
- Transfer the baking sheet to the preheated oven and bake for 12-15 minutes, checking for doneness around the 12-minute mark.
- Once baked, remove the tilapia from the oven, garnish with fresh parsley or dill, and serve with extra lemon wedges.
