- 1 cup long-grain white rice
- 2 tablespoons unsalted butter
- 2 medium onions, thinly sliced
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon sugar
- Salt and pepper to taste
- 1 cup shredded Gruyere cheese (or Swiss cheese)
- Fresh parsley, chopped for garnish
Instructions
- Begin by preparing the onions. In a large skillet, melt 2 tablespoons of unsalted butter over medium heat.
- Add the thinly sliced onions and cook, stirring frequently, until the onions become soft and caramelized, about 20-25 minutes. This will bring out their natural sweetness.
- Once the onions are caramelized, add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
- Stir in the rice to the skillet, allowing it to toast slightly with the onion and garlic mixture for about 2 minutes.
- In a separate pot, bring the vegetable broth to a simmer.
- Pour the simmering vegetable broth into the skillet with the toasted rice and onion mixture. Add the Worcestershire sauce, dried thyme, sugar, and season with salt and pepper to taste. Stir well to combine everything evenly.
- Bring the mixture to a gentle boil, then reduce the heat to low. Cover the skillet and let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed the broth.
- Once the rice is ready, remove the skillet from the heat and carefully fold in the shredded Gruyere cheese until it is melted and combined throughout the rice.
- Let the rice sit for 5 minutes before serving. Fluff it with a fork, then garnish with freshly chopped parsley.

- For a richer flavor, use homemade vegetable broth.
