Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt until well combined.
- In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until fluffy.
- Beat in the eggs one at a time along with the vanilla extract until smooth.

- Fold in the chopped pistachios and dark chocolate chunks until evenly distributed.
- Using a cookie scoop or tablespoon, drop dough onto prepared baking sheets about 2 inches apart.
