Description

Deliciously spiced chicken breasts marinated in a flavorful chipotle lime mixture.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1 lbs)
  • 3 chipotle peppers in adobo sauce, finely chopped
  • 1/4 cup fresh lime juice (about 2 limes)
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp honey (optional)

Instructions

  1. Prepare the marinade by combining chipotle peppers, lime juice, garlic, cumin, paprika, olive oil, salt, and pepper in a bowl.
  2. Place chicken breasts in a resealable bag or dish and pour the marinade over them. Ensure they’re fully coated and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat or oven to 400°F (200°C).
  4. Grill chicken for about 6-7 minutes per side until it reaches an internal temperature of 165°F (75°C). Look for grill marks.
  5. Let the chicken rest for 5 minutes before slicing.
  6. Serve with tortillas or salads, garnished with lime wedges and cilantro if desired.

Notes

  • This marinade is also great for pork or vegetables.
  • Adjust the number of chipotle peppers to taste for more or less heat.
