- 1 whole cauliflower (about 2 lbs)
- 2 tbsp turmeric powder
- 3 tbsp extra virgin olive oil
- 4 garlic cloves, minced
- 2 tbsp fresh lemon juice
- Salt and pepper to taste
- 1 tsp smoked paprika (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the cauliflower under cool water and pat dry. Trim excess leaves while keeping the core intact.
- In a bowl, mix olive oil, turmeric powder, minced garlic, lemon juice, salt, pepper, and paprika until well blended.
- Place the cauliflower upside down in a baking dish and coat generously with the spice mixture.
- Roast for 45-55 minutes until golden brown on top and fork-tender.
- Let cool for 5 minutes before slicing into wedges. Serve warm with additional lemon wedges.
