Lemon Brownies

Description

Deliciously tangy lemon brownies topped with a sweet glaze.


Ingredients

Scale
  • 1 cup granulated sugar
  • 8 tablespoons unsalted butter (at room temperature)
  • 2 large eggs (at room temperature)
  • zest of 1 large lemon
  • 4 tablespoons fresh lemon juice
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/4 cups sifted powdered sugar
  • 23 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat the oven to 350°F. Lightly spray or butter an 8×8-inch baking pan.
  2. Using an electric hand mixer, cream the butter and sugar together in a large mixing bowl until light and fluffy.
  3. Mix in the eggs, one at a time.
  4. Mix in the lemon juice and zest. (Note: the batter may look curdled at this point, but that’s normal.)
  5. Stir in the salt and flour with a rubber spatula, stirring just until everything is well combined – don’t overmix!
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 25-30 minutes or just until the center is set.
  8. Let the brownies cool in the pan on a wire rack.
  9. Once cooled, mix the powdered sugar and enough lemon juice in a small bowl to make a thick but pourable glaze.
  10. Spread the glaze evenly over the top of the completely cooled brownies.
  11. Allow the glaze to set before slicing.

Notes

  • For best results, use fresh lemon juice.
  • Make sure the butter is at room temperature for easier mixing.
