Description

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 3 large eggs (room temperature)
  • Zest and juice of 2 lemons
  • 1/2 cup milk

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, salt, and poppy seeds; set aside.
  3. In another bowl, cream softened butter and sugar until light and fluffy (about 3-4 minutes).
  4. Add eggs one at a time, then mix in lemon zest and juice until smooth.
  5. Gradually fold in dry ingredients into the wet mixture using a spatula.
  6. Pour batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted comes out clean.
  7. Allow cooling before slicing.
