  • 135g Dark Chocolate, Chopped
  • 55g Cold Unsalted Butter
  • 3/4 tsp Vanilla Extract (for frosting)

Instructions

  1. Preheat the oven to 180°C (350°F) and grease and line 3 cake pans.
  2. Combine the milk and vinegar in a jug to make homemade buttermilk and set aside.
  3. Add flour, cocoa powder, baking powder, baking soda, salt, granulated sugar, and dark brown sugar to a large bowl and whisk until combined.
  4. Beat the eggs in another bowl, then add the buttermilk mixture, oil, and vanilla extract.

  10. Add cold milk, whisking until combined.
  11. Heat this mixture over low-medium heat until it thickens, about 8-10 minutes.
  12. Stir in chopped chocolate and cold butter, whisking until melted and smooth.
  13. Let the frosting sit at room temperature for about 30 minutes, then refrigerate for another 30 minutes.
  14. Frost the cake with frosting between each layer and on top, then refrigerate for 15-20 minutes to set.
