A delicious and creamy tuna salad with a spicy twist from crispy jalapeños, perfect for sandwiches or on its own.
Ingredients

- 12 oz tuna (packed in olive oil, drained)
- 2 tsp apple cider vinegar
- 1 Tbsp lemon juice
- ½ cup mayonnaise (plus more, as desired)
- 2 tsp wasabi paste
- 2 tsp Italian dressing
- 3 Tbsp red onion (finely chopped)
- 3 Tbsp dill pickles (finely chopped)
- ⅓ cup crispy jalapeño chiles (Don Chilio’s brand jalapeno Mexican chile crisps)
- ¼ cup apple (chopped)
- 2 tsp agave syrup
- ½ cup fresh corn kernels
- ½ cup frozen peas (thawed)
- salt & pepper (to taste)
Instructions
- Break up 12 oz tuna in a mixing bowl and add 2 tsp apple cider vinegar, 1 Tbsp lemon juice, ½ cup mayonnaise, 2 tsp wasabi paste, and 2 tsp Italian dressing. Mix to combine.
- Add 3 Tbsp red onion, 3 Tbsp dill pickles, ⅓ cup crispy jalapeño chiles, chopped ¼ cup apple, 2 tsp agave syrup, ½ cup fresh corn kernels, and ½ cup frozen peas. Mix and taste, season with each, salt & pepper to taste.
Notes
- This salad can be served on crackers, in a sandwich, or over a bed of greens.
- Adjust the level of wasabi based on your heat preference.
