Description

This rhubarb simple syrup is a refreshing addition to drinks and desserts.


Ingredients

Scale
  • 3 cups chopped rhubarb
  • 1 cup granulated sugar
  • 1 cup water

Instructions

  1. Wash the rhubarb and cut into chunks.
  2. Add the rhubarb, sugar and water to a small pot and place over a medium/low heat.
  3. Bring nearly to the boil, then reduce the heat and simmer for 20 minutes.
  4. Allow the rhubarb syrup to cool slightly, then strain through a fine mesh strainer over a bowl.
  5. Tip: Save the rhubarb solids – they’re like a sweet compote and great on yogurt or ice cream.
  6. Pour the simple syrup into a bottle or jar and store in the fridge for up to 2 weeks.
