Description

A delectable grilled cheese sandwich made with a variety of cheeses and flavorful basil pesto.


Ingredients

  • 1 loaf Artisan sourdough loaf
  • 1/2 to 2 tablespoons Basil pesto (homemade or store-bought)
  • 1/2 cup Sharp provolone cheese
  • 1/2 cup Young fontina cheese
  • 1/2 cup Shredded Gruyere cheese
  • 1/2 cup Extra-sharp cheddar cheese
  • 1/2 cup Mozzarella cheese (fresh, patted dry)
  • 1/2 cup Monterey Jack cheese
  • 1/2 cup Havarti cheese
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Mayonnaise (optional)
  • 1 teaspoon Minced garlic or garlic powder (optional)
  • 1/2 cup Roasted red peppers (optional)
  • 1 cup Fresh baby spinach (optional)
  • 1 Thinly sliced tomato (optional)
  • 1/2 cup Cooked roast beef (optional)
  • 1/2 cup Caramelized onions (optional)

Instructions

  1. Gather everything you need. Grate about 1/2 to 3/4 cup of block cheese per sandwich and slice the sourdough bread into even 1/2 to 3/4-inch thick pieces. Ensure your butter is softened or have your mayonnaise ready.
  2. On one side of each slice of sourdough bread, spread a thin, even layer of softened butter or mayonnaise.
  3. Flip one slice of bread so the un-buttered/un-mayo’d side is facing up. Spread a generous layer of pesto (1 to 2 tablespoons) on this side, layer half of your grated cheese evenly over the pesto, add any optional fillings, then top with the remaining grated cheese. Place the second slice of sourdough bread on top, un-buttered/un-mayo’d side facing down.
  4. Heat a non-stick skillet or cast-iron pan over medium-low heat.
  5. Place your assembled sandwich into the preheated pan and cook for about 4-6 minutes, until the bottom slice is deeply golden brown and crispy.
  6. Carefully flip the sandwich to the other side. If the cheese isn’t melting quickly, cover the pan with a lid for the last 2-3 minutes of cooking. Cook for another 4-6 minutes until the second side is golden brown and the cheese is melted.
  7. Remove the sandwich from the pan, slice it in half diagonally, and serve right away while the cheese is still hot and stretchy.
