- 2 packs ramen noodles (discard seasoning packets)
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon sriracha (adjust to taste)
- 1 tablespoon rice vinegar
- 2 teaspoons sesame oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon olive oil
- 2 green onions, sliced
- 1 teaspoon sesame seeds (optional)
Instructions
- Cook the noodles: Bring a pot of water to a boil and cook the ramen noodles according to package instructions. Do not use the seasoning packets. Drain and set aside. I like to slightly undercook them by about 30 seconds so they stay perfectly chewy when tossed in the sauce.
- Prepare the sauce: In a small bowl, whisk together soy sauce, brown sugar, sriracha, rice vinegar, and sesame oil. Stir until the sugar dissolves. The aroma at this stage is already incredible—sweet with a hint of heat.
- Sauté the aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and grated ginger. Cook for about 30 seconds until fragrant. Be careful not to overcook; you just want it lightly golden and aromatic.
- Combine everything: Add the drained noodles to the skillet. Pour the sauce over the top and toss gently to coat. Let everything cook together for 2–3 minutes, allowing the sauce to thicken slightly and cling to the noodles.
- Garnish and serve: Sprinkle sliced green onions and sesame seeds on top. Serve immediately while hot and glossy.
