Description

A comforting creamy tomato basil soup perfect for any occasion.


Ingredients

Scale
  • 2 cans (14 ounces each) diced tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable or chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • 1 tablespoon olive oil
  • ½ cup heavy cream (optional)
  • Fresh basil leaves for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté chopped onion until translucent (about 5 minutes).
  2. Add minced garlic and cook for another 1-2 minutes.
  3. Pour in canned tomatoes (with juices) and broth. Stir in basil and oregano, then bring to a simmer for 15-20 minutes.
  4. Blend the soup until smooth using an immersion blender or regular blender.
  5. If desired, stir in heavy cream for richness; season with salt and pepper to taste.
  6. Serve hot, garnished with fresh basil leaves.

Notes

  • For a spicier version, add red pepper flakes while cooking.
