Description
A refreshing avocado salad with cherry tomatoes and cucumber.
Ingredients

- 2 ripe avocados
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 2 tbsp lemon juice (freshly squeezed)
- 2 tbsp extra virgin olive oil

Instructions
- Rinse the cherry tomatoes and cucumber. Halve and pit the avocados, then scoop them into a large bowl.
- Dice the avocados into bite-sized pieces. Add halved cherry tomatoes, diced cucumber, and chopped red onion to the bowl.
- In a small bowl, whisk together lemon juice and olive oil. Season with salt and pepper.
- Pour the dressing over the salad ingredients and gently toss to combine.
- Taste and adjust seasoning if necessary. Serve immediately or chill before serving.
Notes
- For best flavor, use ripe avocados.
- This salad can be served chilled or at room temperature.
