Description

Delicious and moist banana chocolate chip muffins perfect for breakfast or a snack!


Ingredients

  • 3 bananas, mashed (about 1 cup mashed)
  • 2 eggs, at room temperature
  • 2 tbsp olive or avocado oil
  • 1/3 cup coconut sugar (optional for sweetness)
  • 1 tsp vanilla extract
  • 2 1/4 cups almond flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • ¼½ cup chocolate chips, as desired

Instructions

  1. Preheat the oven to 350°F and line a muffin pan with paper liners.
  2. In a large bowl, mash the bananas until smooth. Add the eggs, avocado oil, coconut sugar, and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk together the almond flour, baking soda, salt, cinnamon, and nutmeg.
  4. Add the dry ingredients to the wet ingredients and gently mix until just combined. Fold in the chocolate chips.
  5. Spoon the batter into the muffin liners, filling each about three-quarters full.
  6. Bake for 20–24 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool for a few minutes before serving. Enjoy!

Notes

  • For extra sweetness, add up to 1/3 cup of coconut sugar.
