Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/3 cup vegetable oil
- 2 large eggs
- Zest of 1 large orange
- 1/2 cup fresh orange juice
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or non-stick spray.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, vegetable oil, eggs, orange zest, and orange juice until well combined.
- Gently fold the wet ingredients into the dry ingredients until just combined; do not overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool slightly before removing from the tin and enjoy warm.
