Description

Delicious orange-flavored muffins perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 2 large eggs
  • Zest of 1 large orange
  • 1/2 cup fresh orange juice

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or non-stick spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the milk, vegetable oil, eggs, orange zest, and orange juice until well combined.
  4. Gently fold the wet ingredients into the dry ingredients until just combined; do not overmix.
  5. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  6. Bake for 18-20 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  7. Allow to cool slightly before removing from the tin and enjoy warm.
