Baked Beef Noodle Casserole

Description

A delicious baked beef noodle casserole with a creamy cheese mixture and topped with Colby Jack cheese.


Ingredients

  • 1 lb ground beef
  • 1 chopped onion
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/4 tsp red pepper flakes
  • 1 (24 oz) jar marinara/pasta sauce
  • 1 (12 oz) bag egg noodles
  • 1 cup sour cream
  • 1 cup ricotta cheese
  • 4 oz cream cheese, softened
  • 1/4 cup shredded Parmesan cheese
  • Shredded Colby Jack cheese (for topping)

Instructions

  1. Brown the ground beef with chopped onion in a large skillet over medium-high heat. Season with salt, pepper, paprika, onion powder, garlic powder, and red pepper flakes. Drain any extra fat.
  2. Bring a pot of salted water to a boil and cook the egg noodles until they’re just tender. Drain and set aside.
  3. Stir in the marinara sauce into the browned meat mixture and reduce the heat to low to simmer.
  4. In a large bowl, combine sour cream, ricotta, cream cheese, and shredded Parmesan. Stir until smooth.
  5. Add the cooked noodles to the cheese mixture and toss gently until coated.
  6. Grease a 9×13 baking dish. Pour half of the noodle mixture into the dish, then half of the meat sauce. Repeat with remaining noodles and meat sauce.
  7. Top with shredded Colby Jack cheese and bake in a preheated oven at 350°F for about 20-25 minutes until bubbly and golden.
  8. Let rest for a few minutes before serving. Garnish with dried parsley flakes.
