Description

Delicious and chewy oatmeal cookies packed with raisins.


Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add this dry mixture to the wet ingredients until just combined.
  5. Fold in rolled oats and raisins until evenly mixed.
  6. Drop rounded tablespoons of dough onto prepared baking sheets about two inches apart.
  7. Bake for 10-12 minutes or until edges are golden brown but centers remain soft. Allow to cool on the baking sheet for five minutes before transferring to wire racks.

Notes

  • For extra flavor, add a teaspoon of vanilla extract to the butter and sugar mixture.
  • Make sure to not overbake the cookies to keep them chewy.
