Delicious and chewy oatmeal cookies packed with raisins.

- 1 cup old-fashioned rolled oats
- 1 cup all-purpose flour
- 3/4 cup packed brown sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (softened)
- 2 large eggs
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 cup raisins
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In another bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add this dry mixture to the wet ingredients until just combined.
- Fold in rolled oats and raisins until evenly mixed.
- Drop rounded tablespoons of dough onto prepared baking sheets about two inches apart.
- Bake for 10-12 minutes or until edges are golden brown but centers remain soft. Allow to cool on the baking sheet for five minutes before transferring to wire racks.
Notes
- For extra flavor, add a teaspoon of vanilla extract to the butter and sugar mixture.
- Make sure to not overbake the cookies to keep them chewy.
