Chicken Quesadillas

Description

Delicious chicken quesadillas filled with cheese, bell peppers, and onions.


Ingredients

Scale
  • 2 cups cooked chicken, shredded or diced
  • 1 ½ cups shredded cheddar cheese (or Mexican blend cheese)
  • 4 large flour tortillas
  • 1 tablespoon olive oil or butter
  • ½ cup diced bell peppers
  • ¼ cup diced onion
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • Optional toppings: Sour cream, Salsa, Guacamole

Instructions

  1. In a bowl, mix the cooked chicken, garlic powder, paprika, salt, and pepper.
  2. Place a skillet over medium heat and add olive oil or butter.
  3. Place one tortilla in the skillet and sprinkle cheese over half of it.
  4. Spread the seasoned chicken, bell peppers, and onion on top of the cheese.
  5. Sprinkle another layer of cheese over the chicken to help everything stick together.
  6. Fold the tortilla in half and press gently with a spatula.
  7. Cook for about 2 to 3 minutes per side until crispy and the cheese melts.
  8. Remove from the pan and cut into wedges. Serve warm with salsa or sour cream.

Notes

  • You can use rotisserie chicken for convenience.
  • Mozzarella or Monterey Jack also work well instead of cheddar.
