Description
Delicious chicken quesadillas filled with cheese, bell peppers, and onions.
Ingredients

- 2 cups cooked chicken, shredded or diced
- 1 ½ cups shredded cheddar cheese (or Mexican blend cheese)
- 4 large flour tortillas
- 1 tablespoon olive oil or butter
- ½ cup diced bell peppers
- ¼ cup diced onion
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- Salt to taste
- Black pepper to taste
- Optional toppings: Sour cream, Salsa, Guacamole
Instructions
- In a bowl, mix the cooked chicken, garlic powder, paprika, salt, and pepper.
- Place a skillet over medium heat and add olive oil or butter.
- Place one tortilla in the skillet and sprinkle cheese over half of it.
- Spread the seasoned chicken, bell peppers, and onion on top of the cheese.
- Sprinkle another layer of cheese over the chicken to help everything stick together.
- Fold the tortilla in half and press gently with a spatula.
- Cook for about 2 to 3 minutes per side until crispy and the cheese melts.
- Remove from the pan and cut into wedges. Serve warm with salsa or sour cream.
Notes
- You can use rotisserie chicken for convenience.
- Mozzarella or Monterey Jack also work well instead of cheddar.
