Description

Delicious taco cups made with ground chicken, refried beans, and topped with cheese and fresh ingredients.


Ingredients

  • 1 lb ground chicken (or turkey)
  • 1 cup taco seasoning (store-bought or homemade)
  • 1 cup shredded cheddar cheese (for topping)
  • 1 cup refried beans (canned or homemade)
  • 1 cup diced tomatoes (drained)
  • 1 cup tortilla chips (crushed)
  • 1 cup sour cream (for serving)
  • 1 cup shredded lettuce (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine ground chicken and taco seasoning. Mix until well combined.
  3. Spray a muffin tin with cooking spray. Press crushed tortilla chips into the bottom and sides of each muffin cup to form a shell.
  4. Spoon a layer of refried beans into each tortilla shell, followed by the seasoned chicken mixture.
  5. Top each cup with diced tomatoes and shredded cheddar cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  7. Remove from the oven and let cool slightly before serving.
  8. Serve with sour cream and garnish with shredded lettuce.
