- 1 lb ground chicken (or turkey)
- 1 cup taco seasoning (store-bought or homemade)
- 1 cup shredded cheddar cheese (for topping)
- 1 cup refried beans (canned or homemade)
- 1 cup diced tomatoes (drained)
- 1 cup tortilla chips (crushed)
- 1 cup sour cream (for serving)
- 1 cup shredded lettuce (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine ground chicken and taco seasoning. Mix until well combined.
- Spray a muffin tin with cooking spray. Press crushed tortilla chips into the bottom and sides of each muffin cup to form a shell.
- Spoon a layer of refried beans into each tortilla shell, followed by the seasoned chicken mixture.
- Top each cup with diced tomatoes and shredded cheddar cheese.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Remove from the oven and let cool slightly before serving.
- Serve with sour cream and garnish with shredded lettuce.
