Description

This Cheesy Beef Lasagna Soup is a comforting and delicious dish that combines all the flavors of traditional lasagna in a hearty soup.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 (24-oz) jar marinara sauce
  • 4 cups beef or chicken broth
  • 1 (14 oz) can diced tomatoes, undrained
  • 2 teaspoons Italian seasoning
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 8 oz lasagna noodles, broken into pieces (or mafalda pasta)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley, chopped, for garnish
  • Salt and black pepper to taste

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat, breaking it apart with a spoon. Drain excess fat if needed.
  2. Add diced onion and sauté for 3–4 minutes until softened. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Pour in marinara sauce, broth, diced tomatoes, Italian seasoning, basil, and red pepper flakes (if using). Season with salt and pepper. Bring to a boil.
  4. Add broken lasagna noodles to the pot. Reduce heat to medium-low and simmer for 10–12 minutes, or until pasta is tender, stirring occasionally to prevent sticking.
  5. In a small bowl, mix ricotta, half the mozzarella, and half the Parmesan until well combined.
  6. Once pasta is cooked, turn off heat. Drop spoonfuls of the cheese mixture over the soup.
  7. Sprinkle remaining mozzarella and Parmesan over the top. Cover the pot for 2–3 minutes to let the cheese melt.
  8. Garnish with fresh basil or parsley and serve hot with extra Parmesan on the side.

  • This soup can be made ahead of time and stored for a few days in the refrigerator.
  • Feel free to add more vegetables such as spinach or bell peppers for extra flavor and nutrition.
  • For a thicker soup, reduce the amount of broth used.
