Description

Delicious and fluffy pancakes made with cottage cheese and rolled oats, perfect for a healthy breakfast.

Ingredients

Scale
  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup
  • Pinch of salt
  • 12 tablespoons butter or oil for cooking

Instructions

  1. Blend the Batter: In a blender, combine the cottage cheese, eggs, rolled oats, baking powder, vanilla extract, honey, and salt. Blend until smooth. The mixture should look creamy with a slightly thick consistency. If it feels too thick, add a tablespoon of milk to loosen it slightly.
  2. Let It Rest: Allow the batter to sit for about 5 minutes. This gives the oats time to absorb moisture and helps create a fluffier texture. I like to use this time to warm plates or prepare fresh fruit toppings.
  3. Heat the Pan: Place a non-stick skillet over medium heat and add a small amount of butter or oil. Once melted and lightly shimmering, it is ready.
  4. Cook the Pancakes: Pour small rounds of batter into the pan, about 2–3 tablespoons per pancake. Because Flourless Cottage Cheese Pancakes are delicate, keep them small for easier flipping. Cook for 2–3 minutes until bubbles form and the edges look set.
  5. Flip Gently: Carefully flip and cook for another 2 minutes until golden brown. The outside should be lightly crisp while the inside stays soft and tender.
  6. Serve Warm: Stack them high and serve immediately. Fresh berries, sliced bananas, Greek yogurt, or a drizzle of maple syrup pair beautifully.
