Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- Gradually mix in espresso powder, cocoa powder, flour, baking soda, and baking powder until just combined.
- Gently fold in chocolate chips until evenly distributed.
- Scoop tablespoon-sized portions onto prepared baking sheets and space them apart.
- Bake for 10-12 minutes or until edges are golden while centers remain soft.
Notes
- For a stronger coffee flavor, you can increase the espresso powder.
- Store the cookies in an airtight container at room temperature to maintain softness.
