A delicious cake made with fresh fruit jam and a buttery base.
Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter (softened)
- 3 large eggs
- 1 cup buttermilk
- 1 cup fruit jam (strawberry, raspberry, or peach)
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease two round cake pans.
- Cream together butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- In another bowl, whisk flour, baking powder, and salt. Gradually add dry ingredients to the butter mixture alternately with buttermilk.
- Gently fold in the fruit jam until evenly distributed.
- Pour batter evenly into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Cool on wire racks before assembling layers with additional jam if desired.
Notes
- For a richer flavor, use unsalted butter.
- Feel free to mix different fruit jams for unique flavors.
