- 1 tablespoon lemon zest (freshly grated for best flavor)
- 2 tablespoons lemon juice (about 2 lemons needed)
- 1 teaspoon salt (for seasoning)

- 1 cup fresh basil leaves (dried basil can be used if fresh isn’t available)
- 1 cup arugula leaves (can substitute with spinach for a milder flavor)
Instructions
- Bring a large pot of salted water to a rolling boil over high heat.
- Add 12 ounces of linguine and cook according to package instructions, typically about 9-11 minutes until al dente. Reserve 1 cup of the pasta water before draining.
- Return the drained pasta to the pot over low heat. Stir in 1 cup of ricotta, 0 cup of grated Parmesan, zest of 1 lemon, juice of 2 lemons, 1 teaspoon of salt, and black pepper to taste. Mix until creamy.
- Gradually add 0 cup of reserved pasta water, stirring until the sauce reaches your desired consistency. Fold in the cooked linguine.
- Serve in bowls, garnished with fresh basil and arugula. Enjoy hot.
