Delicious stuffed potatoes filled with shrimp and cheese.

- 4 large russet potatoes
- 1 cup cooked shrimp, chopped (or crab meat)
- 1/2 cup cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1 teaspoon Old Bay seasoning
- Optional: chopped green onions, for garnish
Instructions
- Start by preheating your oven to 400°F (200°C).
- Wash and dry your russet potatoes. Pierce each potato several times with a fork to allow steam to escape. Place them directly on the oven rack and bake for 45-60 minutes, until tender.
- While the potatoes are baking, combine the chopped shrimp, cream cheese, cheddar cheese, and Old Bay seasoning in a mixing bowl. Stir until well blended.
- Once the potatoes are done, remove them from the oven and let them cool for 5-10 minutes. Carefully slice each potato in half lengthwise and scoop out the insides, leaving a thin layer of potato intact to maintain the skin’s structure.
- Add the scooped-out potato to the seafood mixture, stirring until everything is well incorporated.
- Fill each potato skin with the seafood filling, packing it generously.
- Place the stuffed potatoes on a baking sheet and return them to the oven. Bake for an additional 15-20 minutes, until the tops are golden and the filling is heated through.
- If desired, sprinkle chopped green onions on top for added flavor and color before serving.
Notes
- Make sure to pierce the potatoes well for even cooking.
- Feel free to substitute crab meat for shrimp if desired.
